Chocolate Clusters
Billy and I hosted a dinner party over the holidays and our friend Leigh gave us a new cookbook as a hostess gift. (Guess who is going to straight to the top of my guest lists?!) I am in the process of prioritizing what to make. Hmmm. The cookbook is aptly named Homemade Winter and has a delightful, unique assortment of recipes full of comfort food.
It's going to take me some time to work through the assorted sections, but I thought I should at least give one of the chocolate desserts a try!
This is what you need:
- 1/2 cup butter
- 1/4 cup cocoa powder
- 1/4 cup powdered sugar
- 1/4 cup Karo syrup
- 1/4 cup Craisins (or other dried fruit)
- 2-3 cups Corn Flakes
Begin by combining the Karo and butter. Melt over medium heat on a stove top or in the microwave heating for a minute at a time.Add the cocoa powder and stir thoroughly. (Note, between the picture above and below, I decided to double the recipe, so don't let the images throw you!)Add the powdered sugar and craisins and stir.Add the cornflakes and gently stir. Keep adding cereal until there's no sauce remaining. Watch out for the lurking dog who is ready to snag the treats!Using a couple of spoons, put the mixture into paper cups in clusters. If you don't have paper cups, wax or parchment paper would work.Allow the clusters to dry overnight then place on a platter for serving. Make sure you have plates or napkins handy since these do fall apart. These chocolate clusters are SO yummy!!!
