Easy Emergency Chocolate Cake

It was 10 pm and I just remembered that we were having company the next day.  Adding an errand onto my already stretched calendar wasn't an option, and, since I was already in pj's, I wasn't motivated to get to the store, so I just combed through my cabinet to see what I had available. Lucky for me I had everything necessary for Sue's Chocolate Cake.  I add the word "emergency" because I only seem to make this dessert when I need a dessert in a pinch.  I almost always have these items on hand.  Hopefully you do too!

Here's what you need:

  • 2 eggs
  • 1 box chocolate cake mix (any variety will do)
  • 1 box chocolate pudding
  • 1 1/4 Cups water
  • 1/4 Cup Vegetable oil
  • 1 Cup Chocolate chips
  • Powdered sugar for dusting

Preheat oven to 350 degrees and grease a bundt cake pan.  Start by whipping the eggs.

Mix in the rest of the ingredients EXCEPT the chocolate chips.When all of the lumps are gone, remove the beater and fold in chocolate chips. Don't over stir or else the chips with all sink to the bottom!Pour into a greased bundt pan.Bake for 35-40 minutes or until a wooden toothpick comes out smooth.  Allow cake to cool in the pan for at least 10 minutes.After cooled, turn out of the pan.  Allow the cake to cool completely before adding powdered sugar (otherwise it will just melt into the cake!)Display on a pretty platter.Serve with whipped cream or ice cream or berries OR whatever doesn't make you need to run to the grocery store!
