Fruit Pizza
In case you are still thinking about what kind of dessert to make for Easter brunch, try this oh-so-easy and pretty fruit pizza. Here's what you'll need:
- 1 package sugar cookie dough (or make a homemade batch if you'd rather)
- 1 8 oz package cream cheese brought to room temperature
- 1/3 cup sugar
- 1 Tablespoon Honey
- 3 tsp vanilla
- Assorted chopped fresh fruit. In this picture you'll see raspberries, kiwi, nectarine, strawberries, papaya
- Having a child "photo bomb" your picture is entirely optional
For the most "pizza" looking effect, use a round pizza baking sheet, though a square one would certainly work. Note -my sheet had holes in the bottom, so I placed another cookie sheet underneath before baking. Using the heel of your hand, spread the dough out evenly around the sheet.Bake according to package instructions OR until the edges are firm but not brown. For me, this meant that I baked for an additional 5 minutes from the directions on the package. (18 minutes total)While the cookie is baking, beat the cream cheese and sugar together until smooth.Add vanilla.Add the honey.
Remove the "crust" from the oven and allow it to cool completely. When the dough is cool, top with the cream cheese mixture. Don't worry about getting it perfect, focus on COVERAGE!At this point, you've created your palate for a little artistic work! Cut up your fruit and play with the design!! I thought it would be a good ideas to start with the smallest fruit first. Raspberries & Kiwi get top billing.
I used papaya for the bigger sections of the pizza since there's so much more fruit to work with. If you've never purchased papaya before, don't let the ugly skin or nasty seeds throw you off. The fruit is easy to peel and the seeds scoop out like a charm.When you finish decorating, you'll have a treat that's as lovely to look at as it is to eat!All together now, say "oooooh pretty!"
