Ice Cream Sandwich “Casserole”
Have you made this ice cream deliciousness this summer? If not, GET. ON. IT!!! Even if you consider yourself a “non-baker,” this is THE dessert for you (courtesy of my friend Elizabeth). In fact, you don’t have to mix or measure a single ingredient for this delicious dessert; assembly only required! Here’s what you need to buy:
- 1-2 boxes ice cream sandwiches (depending on how large a pan you’re using)
- 1-2 tubs of whipped cream (ditto the parenthesis above!)
- Assorted “toppings” – syrups, sprinkles, nuts, chopped candy bars, fruit
You’ll see from the picture that I’m not afraid to use artificial sweeteners, so I buy the sugar-free varieties of almost every ingredient except for the sprinkles and candy bars. (I may or may not have raided my kids' valentine boxes.)
Then start your assembly process in either a square (8x8) or rectangular (9x13) glass pan. Ready? Here goes:
Unwrap and lay out bottom layer of ice cream sandwiches. Cut sandwiches to fit. If you don’t have quite enough (ahem!), improvise by filling the gaps with whipped cream (or vanilla ice cream!!). As you can see, this layer doesn't need to be pretty!
Cover the sandwiches with a thin layer of whipped cream and top with some syrup, nuts, and candy bars.
Cover those toppings with another layer of ice cream sandwiches.
Make your final layer of whipped cream and assorted toppings.
Refreeze until you’re ready to serve. If you’re using fruit, put on top of the dessert just before serving.
How easy is that?!
