Incredible Chilaquiles

Heading out for Labor Day, but since this is on the weekend menu, I wanted to remind you of its goodness!! Have a terrific weekend!!

For those of you steeped in Mexican food, probably you have already experienced the joy of chilaquiles.  (Pronounced "chill-E-Kill-E-s"), but if you haven't, you're in for a treat!!

This traditional Mexican dish is common for weekend brunches and is, quite possibly, my favorite meal to make.  In fact, I rank it so high that this has become our traditional Christmas morning breakfast.  Still, you can serve it any time you're in the mood!

Plus, since it's an "assemble as needed" meal, it's great for a crowd.

My niece Lindsay is responsible for this addiction and has kindly agreed to let me share her "Papa Joe's Chilaquiles" recipe with you.

Here's what you need:

  • 12 corn tortillas (at a minimum! Make extras if you have the time, they will be eaten!)
  • 1 large red onion (or sweet onion – like Vidalia or Maui- if you’d rather), sliced
  • Cilantro (10 springs, chopped)
  • Green Tomatillo sauce (Herdez 1-2 cans) aka “salsa verde”
  • Mexican cheese wheel – Queso Fresco or Queso Seco - grated
  • Plain, unsweetened yogurt, 1 cup (my preference is the Greek variety)
  • 1-2 limes
  • 2 avocados
  • Corn – fresh off the cob or canned (optional)
  • Eggs for scrambling

Prepare chips by cutting the tortillas into 8 sections and frying in oil.  The full process is here if you need more visuals and explanations. This can be done in advance - in fact, I rarely do it the morning of!

Be sure to sprinkle with lime juice and salt.Don't be afraid to give this assignment to others!  When people ask, "how can I help?" give them the frying job.  It's easy and SUPER helpful! I made the entire family work for dinner when they came to town for the Final Four!After the chips are done, everything else comes together quickly.  Sauté sliced onions over low heat until tender and yummy!  When the onions are cooked, return chips to the pan and top with all the ingredients.  You might consider serving the eggs on the side - particularly if your kids don't like salsa with their eggs! Alternatively, if you're not sure everyone enjoys all the ingredients, serve in an assembly-line fashion.  The chips are the base, then top with onions, cheese, salsa, yogurt, etc.  Finish off with a good squeeze of lime.   Add eggs last if using.Dig in!!Enjoy...
