Roasted Sweet Potatoes

A friend recently told me if you had to live on one food alone, sweet potatoes would keep you alive and healthy longer than any other food. I have NO idea if this is true, but there's plenty of evidence sweet potatoes are mighty good for you.  However, some people can't leave well enough alone and have to add bacon to their recipe (ahem...)

Speaking of which, here's what you need for this fabulous recipe my friend Mel shared:

  • 2-3 medium-sized sweet potatoes
  • 1 sweet onion
  • 2 Tablespoon olive oil
  • 2-3 slices of bacon (optional - not in the picture)
  • Salt & Pepper to taste

Begin by dicing your sweet potatoes.  I find the easiest way to do this is to start by making sure you have flat sides to work with.  You achieve this by cutting off the ends (lengthwise).Lay the pieces flat then slice lengthwise so when you dice, the segments are roughly equal.  I usually cut in 1/2 pieces, but the more important point is to have them equal so they cook evenly.Dice the onion. (Keep your mouth closed to minimize the tears!)Toss together along with the olive oil.  Make sure the pieces are all coated.Season with salt and pepper.I routinely cook packages of bacon all at once so I can easily reheat and serve for breakfast.  This also means I toss bacon in a bunch of dishes for fun (seriously, what's NOT fun about bacon?!!).  I love tossing them in with this recipe, but don't feel like you have to!Roast at 425 degrees for 20-30 minutes or until tender. Stir at the half way point.Nom. Nom.
