Speedy Shrimp Salad
Who doesn't love an easy summer salad? And of the assorted salad options, this new recipe from my friend Lynne (via Epicurious) is at the top of the charts because not only is it fast to assemble, it's healthy!!
To start, pull together this list of ingredients:
- 1 lb Grilled Shrimp
- 3 Large Mangoes, cut into chunks
- 1/2 Small Red Onion, chopped (or sliced thinly if you prefer)
- 1/2 Red Bell Pepper minced
- 3 Tablespoons Cilantro, chopped
- 2 Limes
- 1/2 Jalapeno Pepper, seeded and chopped (0ptional)
Put the shrimp on the grill (I just toss in olive oil with a little salt & pepper) and cook until pink through.Chop the pepper, onion, and cilantro. If you're using the jalapeno, chop while wearing gloves.Chop the mango into chunks. Hopefully you know the quick technique. If not here's a quick primer. Begin by cutting the "cheeks" off the mango (that's the long oblong part). Then cross cut making the cut in the fruit along vertical and horizontal lines. BE CAREFUL NOT TO CUT THROUGH TO THE SKIN. It will look like this:
Then push the mango from the back which will push chunks to the front. You can then easily cut the chunks away from the skin. Add the mango to the vegetables. Chop and toss the shrimp in with the mango and pour the lime juice over the entire mixture.Adjust the salt & pepper to your liking. Then serve immediately or chill and serve in a day.Enjoy!!
