Sun-dried Tomato Spread
Are you having company over tomorrow and you need a new appetizer? Or maybe you have a home where people drop by and you always like serving a "little sumpin' sumpin'" to nosh on. Well, the appetizer below is pretty much the easiest appetizer I make. It has a few more ingredients than my "two-ingredient" dessert, but not by much. Thanks to Cathy Dunn for putting me onto this deliciousness! Here's what you need:
- One cube of cream cheese (feel free to use 1/3 less fat version)
- 2-3 green onions, chopped
- approximately 1/2 cup chopped pecans
- approximately 1/2 cup chopped sun-dried tomatoes (oil version is fine - I buy these in bulk at Costco)
- Tabasco & Worcestershire sauce to taste
Put the cream cheese in a bowl and top with onions, pecans, and sun-dried tomatoes. I like to have the cream cheese out for 30 minutes or so before I throw this together in order to keep it easy to mix.
After you've mixed together the large ingredients, add your Tabasco and Worcestershire sauce. This is where you have to do "lots" of tasting. I use about a teaspoon of Tabasco (but I love heat!) and slightly more than that of Worcestershire sauce. (I think...) Really, you just need to keep some crackers handy and sample until you like the flavor. I ALSO play with the amount of onions/nuts/sun-dried tomatoes. I like loading it up with the good stuff, so if you feel like the cream cheese-to-filling ratio isn't right, add more of the first three ingredients!
Presto! You're done. You can make this ahead of time and keep it in the fridge for up to a week.
Serve with crackers and keep the recipe handy -- people definitely want it.
