Thin Mints

The recipe below was the first one I ever posted on my blog.

We make Thin Mints at a regular clip, but especially at Christmas since they are an easy way of contributing to any cookie tray.

In the spirit of the Girl Scouts, I think you should be prepared to make an easy dessert at a moment's notice.  I think you should have this skill so that you are ready to do "a good turn" for neighbors, school teachers,  co-workers, or a family member who is having a bad day.   Yes, the time is now.  You need to know how to make your very own homemade Thin Mints! *

It's so simple that you might become addicted to this function - particularly if you have young kids who like helping you out with the process on lazy Saturday mornings.  Change your topping according to the season so that you have an excuse to have these treats handy at any time.  Here goes...

  • Ritz Crackers
  • Chocolate Bark
  • Peppermint Extract
  • Sprinkles - choose "seasonal" colors according to the closest holiday

Melt the bark in the microwave stirring after every 30 seconds.  Heat until just melted.  Stir in two "caps"  (maybe 1 1/2 tsp or to taste) of peppermint.  Dredge a cracker through the melted chocolate to cover.  Put on wax paper and top with sprinkles immediately.  Cool on the wax paper until you can't stand it any more and have to eat them.
